For rice:

Olive oil: a tablespoon

Fish fillets: 1 kilo (white, such as halibut, cod or swordfish, washed, deboned and cut into large pieces)

Onion: 1 piece (medium size / chopped)

Spring onion: 1/4 cup (chopped)

Tomato: 2 cups (chopped)

Paprika: a tablespoon

Hot red pepper: a pinch

Parsley: a bunch (chopped)

How to prepare:

  1. For fish: Add the fish pieces to a bowl, and season with garlic, lemon juice, salt and pepper.
  2. For vegetables: pour olive oil into a saucepan, over medium heat; When the oil is warm, add the onions, stirring for a few minutes, until translucent.
  3. Then, add the two types of pepper, sprinkle with salt and hot pepper, while stirring.
  4. Add tomatoes and spring onions, after that, with stirring. When the mixture bubbling, reduce the heat, and keep the ingredients on the heat for an additional 5 minutes, without covering the pan.
  5. Add chopped parsley, reserving some for garnish.
  6. Stir the ingredients repeatedly, then use the spoon to divide the vegetable mixture into two parts; One of them remains at the bottom of the pot, over a medium heat.
  7. For stew: Arrange the marinated fish fillets over half of the vegetables, and sprinkle with salt and pepper to taste. A third layer is prepared on top of the fish, which is the second half of the vegetables, then the coconut milk is poured.
