  These carbohydrates are digested slowly to increase energy levels and prolong the feeling of satiety, so red beans are important for controlling blood sugar, especially for diabetics, to prevent high or low blood sugar.

Ingredients:

  • Olive oil: a tablespoon
  • Garlic: clove (finely chopped)
  • Onion: 1 piece (chopped)
  • Celery: Agarwood (chopped)
  • Red pepper: 1 piece (finely chopped)
  • Corn: 1 cup (canned, washed and drained)
  • Black pepper: a quarter of a teaspoon
  • Red beans: 2 cups (boiled and drained / can use canned)
  • Salt: a teaspoon
  • Rice: a cup
  • Hot water: a cup and a half (or chicken broth)
  • Butter: a tablespoon
  • Green coriander: 2 tablespoons (chopped fresh)

How to prepare:

  1. Heat the oil in a non-stick pan on the stove.
  2. Add the onion, garlic, and celery, and stir-fry for 3 minutes.
  3. Add the red pepper and my heart for 5 minutes, until the vegetables soften.
  4. Add rice, salt, and stir for two minutes.
  5. Add beans, corn, broth and black pepper and bring the mixture to a boil.
  6. Reduce the heat, cover the pot, and leave for 30 minutes, until the rice is cooked.
  7. Pour the rice into a serving dish, spread the cilantro on top of the dish and serve hot alongside grilled chicken or meat, as desired.
